Eggs with Black Beans and Rice

If you do not have rice already made, start by cooking the rice. For this, add a tablespoon of olive oil in a pot, and once it is hot, add the sliced clove of garlic. When it begins to color, add the rice. Stir it for a couple of minutes before adding the hot water with a pinch of salt. Cook over high heat for 7 minutes and then turn down the heat to low and cook for 8 more minutes. If in this time, it absorbed all of the water and is still hard, add more water. Let it sit for a little bit.
In a pan, lightly fry a clove of garlic and 1/4 finely chopped onion. Add the black beans and cook for a couple of minutes over medium heat.
Wash the cherry tomatoes and cut them into halves.
Open the avocado, and remove the flesh. Slice the avocado flesh into strips.
Cook the eggs to your liking (scrambled, sunny side up, etc.) with a touch of salt and pepper.
Place the rice, the black beans, the sliced avocado, tomatoes, and eggs onto your plate. Delicious!
