Cut the avocados in half. Remove the pit and use a tablespoon to carefully scoop out the flesh. Dice the avocado flesh, sprinkle with a pinch of salt, and set aside.

Beat the eggs with a little salt.

Put a little olive oil into a skillet. When hot, pour in the beaten egg, stir, and cook as desired. When the eggs are half cooked, add the grated cheese.

Fill the avocado skins with the scrambled eggs and arrange on a plate together with the avocado cubes you set aside earlier.
