Instructions

Prepare the oats and chia in 2 parts. First, put a pot on the stove and add half of the coconut milk and once the milk is hot add the oats and stir for several minutes.

When the oats have doubled in size, add some drops of vanilla extract and stir well. Remove from the heat. Add the oats to a bowl and let it cool down a bit.

Meanwhile, put another pot on the stove and add another cup of coconut milk and once that is hot add the chia seeds and stir for 3 minutes or until the mixture thickens a bit. Add some drops of vanilla extract, stir, and remove the chia seeds from the stove and set aside.

Make some space in the oat bowl with a spoon and add the chia with the milk.

Slice the banana and decorate the bowl with some blueberries and the banana, shredded coconut and if you would like, some honey. Now enjoy!

In order to make this recipe in less time, you can always mix the chia and oats in a bowl and prepare the pudding altogether.

Add the sweetener of your choice if necessary.

This breakfast can be enjoyed at room temperature, but can also be prepared the night before and placed in the fridge and eaten fresh.
