Fresh Couscous Salad with Garbanzos

Put a cup of water to boil with a pinch of salt. Before it begins to boil, turn off the heat and add the cup of couscous. Let it stand until it fully hydrates and then stir it.
Finely dice the bell peppers and the onion. Peel and finely dice the carrots as well.
Add the diced vegetables to a deep bowl and follow with the cooked, drained garbanzos.
Add the oil, vinegar, some salt, and the diced tomatoes to a blender. Blend until you reach a smooth texture. If it is too thick you can add some more oil. Add this dressing to a bowl that has the vegetables and garbanzos. Mix until everything is covered with the dressing.
Place the spinach, vegetables, and garbanzos into a salad bowl. Mix everything with two spoons and then divide into two plates to serve.
