Garbanzos with Sweet Potato and Peppers

Peel and cut the sweet potato into small dice. Fill a pan with plenty of water and bring to a boil. Then add the sweet potato and cook until tender, about 15 minutes.

Mince the onion and cut the green bell pepper into small dice.

Heat a little olive oil in a large skillet. Add the onion and bell pepper and lightly fry for 5 minutes over medium heat, stirring often.

Next, add the cooked sweet potato and chickpeas. Stir in the skillet for a couple of minutes.

Add the tomato sauce to the skillet and season with a little salt. Cook over medium heat for 4–5 minutes. Add a little water to the skillet if needed. Continue to cook until the liquid has reduced. Then turn off the heat and serve.
