1/2 unit
garlic
1 clove
Pantry ingredients
canned chickpea
4 tbsp
chicken broth
1 cup
salt
1 tsp
sweet paprika
1 tsp
olive oil
3 tbsp
Instructions
1
Use a food processor (or a knife if you don’t have one) to chop the garlic, green bell pepper, onion, and tomato into small pieces.
2
Put the olive oil into a large skillet and heat. Then add the chopped vegetables, season with the salt and paprika, and cook over medium heat for 7–8 minutes.
3
In the meantime, use another skillet with a little olive oil to cook the chicken breast, seasoning both sides with a pinch of salt. Remove from the heat and shred.
4
Add the chicken and chickpeas into the skillet with the vegetables and stir. After a few minutes, pour in the broth (you can also add a bay leaf for extra flavor). Cook over medium heat until the broth is reduced to the consistency of a sauce.
Tips & Tricks
You need a big tomato. If you only have small tomatoes, use 2.
Serve with rice, quinoa, or couscous for a more substantial meal.
