Garbanzo Curry with Egg

Chop the onion and bell peppers and cook for 10 minutes in a pan with olive oil.

Meanwhile, boil water in a pot. Once boiling add the eggs. Leave them for 6-8 minutes, depending on how you want your yolk.

Add the coconut milk, curry, cumin, salt, and garbanzos and cook for 3-5 minutes.

When it's ready, peel the eggs and serve with the garbanzos. You can add a bit of parsley on top.
Tips & Tricks
You can add garlic powder, black pepper, or paprika to add more flavor.
If you like spice, try adding more curry, or some drops of tabasco or your favorite hot sauce.
You can add other vegetables like broccoli or carrot and accompany it with rice or quinoa.
