Cauliflower and Lentil Curry

If you don't have rice already prepared you should start by making some. For this, add a tablespoon of olive oil into a pot. Once it's hot add a sliced clove of garlic. When it begins to color add the rice. Stir for several minutes and then add 2 cups of hot water and a bit of salt. Cook on high heat for 7 minutes. Next, lower the heat and cook on low for 8. If in this time the rice has absorbed all of the water and is still hard, add some more water. Let it stand for a bit.

Finely chop the onion and cut the cauliflower into medium size florets.

Cook the cauliflower in an abundance of boiling water for about 6 minutes. After this time, drain, and set aside.

In a large pan add some olive oil. Once hot add the onion and the cauliflower florets. Cook on medium heat for approximately 5 minutes.

Add the cumin and curry and cook for several more minutes.

Add the coconut milk, the lentils, and some salt. Stir and cook on medium heat for 5 minutes. When it begins to boil, lower the heat, and cook on low heat for 15 minutes.

After this time serve on a plate and if you would like you can accompany it with some rice.
Tips & Tricks
You can finish by sprinkling a handful of chopped cilantro on top.
