Instructions

Finely chop the onion and dice the sweet potato into medium size pieces.

Add some olive oil into a large pan. When the oil becomes hot add the onion and sweet potato and cook over medium heat for approximately 5 minutes.

Add the cumin and curry and cook for 1 more minute.

Add the coconut milk, chickpeas, and some salt. Stir and cook over medium heat for 5 minutes. Lower the heat when it begins to boil and cook on low for 15 minutes.

After this time, you can serve on a plate and if you'd like, you can serve with some rice.
