Pea and Carrot Curry

Peel and chop the garlic and onion. Peel and chop the carrots and zucchini into medium size pieces. Lastly, peel and dice the potato.

Add a bit of olive oil into a pan and fry the garlic and onion for several minutes on medium heat.

Add the carrots, zucchini, and potato and cook for several more minutes.

Add the curry and salt and cook on medium heat for 3 minutes.

Add the peas and coconut milk to the pan and mix. Cook on medium-high heat until it begins to boil. Lower the heat and cook for 20-25 minutes or until the vegetables are tender and the curry is at the thickness to your liking.
