Instructions

Preheat the oven to 350°.

Add the coconut oil and the honey into a pot and heat it up. When the ingredients begin to melt and liquify, turn off the heat and remove the pot. Let it cool a bit before adding to the blender with the chopped banana. Blend for half a minute and then set aside.

Mix the oats, walnuts (you can crush them a bit, in half), the flax seeds, and the cinnamon in a bowl.

Pour the blended banana mixture on top of the dry ingredients. Mix well using a spoon so that all of the dry ingredients are coated with the liquid mixture.

Spread some parchment paper on an oven tray and spread the mixture on top. Place in the oven and bake for 20-23 minutes. After this time has ended remove the tray and let it cool. You will notice how the granola will start to become crunchy as it cools.

Tips & Tricks

The trick is to control the timing of the oven, you can't go past the time. If you leave it for longer it can burn without you noticing it! So, pay attention!

If you are following a vegan diet you can substitute the honey for agave syrup.
