Finely mince the onion, green bell pepper, and tomatoes.

Heat some olive oil in a skillet and cook the minced vegetables over low heat for 5 minutes. Then add the chile and season with a pinch of salt. Stir from time to time until the ingredients are cooked through, then remove this salsa from the heat.

Fry the two eggs in another skillet with some oil.

Finally, warm your tortillas.

Assemble the dish: Spread the salsa from the skillet over the tortillas and top with the fried eggs. If you like, you can add a little diced avocado and crumbled fresh cheese (optional).
