Lentil Filled Spinach Crepes

In a bowl add the egg, milk, oats, and blend well with a hand mixer. Slowly start to add the spinach without stopping until the ingredients are blended well.

Add some drops of olive oil to a pan. Once it's hot add some of the batter you've just prepared and spread it out across the whole pan. Cook on medium-high heat. Once it begins to form bubbles on top, use a spatula to flip the crepe to cook on the other side. Repeat these steps until the batter finishes.

Prepare the filling. Finely dice the onion and cook in a pan with some hot oil.

Once the onion is golden, add the lentils and cook for about 1 minute. Add the tomato sauce and let the flavors integrate.

Fill each crepe with the lentils and if you would like you can add some cheese into each one and place again on the pan to melt it.
