Lentil Mustard Salad with Potatoes

Wash and cut the potatoes into medium size pieces. Put water to boil in a pot and once it begins to boil, add the potatoes with a bit of salt. Cook until they are tender. You will know when they are ready when you prick them and they are not hard. Once ready, drain, and let them cool completely.

Wash and shred the lettuce thinly along with the onion. Also, slice the pepper. If you like intense flavors you can add some red peppers to the salad without cooking it. If it is too strong, you can cook them a bit on a hot pan or use roasted peppers.

Add the cooked potatoes, drained lentils, lettuce, onion, and peppers to the salad bowl. Add the salad dressing and gently toss. Ready!
Tips & Tricks
We used roasted red bell peppers we had in the fridge for this recipe. Adapt the recipe and always use the ingredients you have that are on the brink of spoiling, without having to change the recipe so much. For example, half a can of garbanzos (instead of lentils), escarole or arugula or spinach (instead of lentils), etc.
