Macaroni with Chicken and Vegetables

Pantry ingredients
macaroni

olive oil

Instructions

Peel the onion, carrot, and zucchini and cut into strips. Cut up the bell peppers in the same way. Wash and dice the tomato.

Put 3 tablespoons oil into a skillet and place over medium heat. When hot, add all the vegetables except the tomato. Fry over medium heat, stirring frequently, until a little golden and tender but still firm to the bite. When nearly done, add the tomato and season with salt.

Sprinkle the chicken with salt and pepper and cut into strips. Fry in a skillet with a tablespoon of olive oil over high heat.

In the meantime, prepare the pasta. Cook the macaroni in boiling water with a teaspoon of salt for the time indicated on the package.

Drain the pasta and mix with the vegetables and chicken. Serve hot for maximum enjoyment.
Tips & Tricks
A good drizzle of soy sauce does wonders for this dish. If you have some, don’t think twice about adding it to the vegetables and chicken when frying.
