Mushroom and Tofu Noodles

Instructions

Cook the rice noodles as specified in the instructions. Generally they don't require much cooking time.

Peel and cut the vegetables, and tofu into small pieces.

Add a drizzle of olive oil in a large pan and once it's hot add the onion, mushrooms, and tofu. Cook on medium heat for several minutes.

After this time add the pieces of carrot and the shredded cabbage. Lightly fry the ingredients on medium heat for 10-12 minutes.

When the vegetables are cooked but still crunchy add the soy sauce, grated ginger, and mix. Next, add the already cooked noodles and peanuts, and stir well.
Tips & Tricks
You can add a couple tablespoons of oyster sauce to the soy sauce.
