Chinese Noodles with Vegetables

Fill a pan with water and bring to a boil. Cook the noodles for the time indicated on the package. Then drain and set aside for later.

Meanwhile, prep the vegetables. Peel and cut the carrot, green bell pepper, and red bell pepper into strips. Drain the mushrooms carefully if using canned; wash well under running water if using fresh. Cut the onion into wedges.

Heat a little oil into a skillet or wok (if you have one). Then add the vegetables. Let cook, stirring from time to time. After 5 minutes, add the soy sauce and stir. When the vegetables are cooked but still crunchy, add the noodles and mix well. Add a little more soy sauce if desired. Enjoy!
Tips & Tricks
This dish is ideal to make with Chinese noodles that are available in most supermarkets. However, if you don't have any, you can use any kind of long and thin pasta.
You can add more vegetables if you like, such as broccoli and zucchini, and leave out any in the recipe that you don’t like or don't have. This dish is very versatile.
