Put the 2 eggs into a bowl and beat them, adding a bit of salt and pepper to your liking.
If the mushrooms are fresh, peel them, if they are canned then only drain them. Slice them as well.
Heat up a pan with oil and add the garlic and cook over low heat for several minutes so the oil absorbs the flavor.
Remove the garlic and add the onion. Let it cook until it is translucent, then add the sliced mushrooms to the pan and let them brown.
Now add the eggs and begin to stir immediately using a spoon (preferably a wooden one so it doesn't stick) to create the scramble. Let it cook until you see fit, if you want it more runny the cooking time is less, and if you want them more dry then it's more cooking time.
Tips & Tricks
You can season with whichever spice, such as herbs de Provence or even parsley.
