Leek, Mushroom, and Zucchini Scramble

Chop the leek. Wash the mushrooms and zucchini and slice them.

Add a drizzle of oil to a pan. Once hot, add the mushrooms. Sauté for 3-4 minutes over medium heat. Now add the leek and zucchini. Add salt to the ingredients and cook for 5 more minutes over medium heat. Stir occasionally so it doesn't burn.

Beat the eggs and pour into the pan. Mix the ingredients together and cook to your desired level of doneness.
Tips & Tricks
If you don't have leek, you can substitute them for onion since they are in the same family.
