Mushroom Omelet

Wash the mushrooms and chop them into medium size cubes. Chop the onion.

Add olive oil to a pan. Once hot, add the mushrooms and onion, and sauté over medium heat for about 10 minutes. Add some salt to the ingredients.

While the vegetables are cooking, beat the eggs with a pinch of salt.

In a bowl, add the beaten eggs, the sautéed mushrooms and onion, and mix together.

Add some oil to the pan used before, and add the omelet mixture. When the bottom of the omelet is cooked, flip it over and cook the other side (just like if it was a potato omelet). Turn off the heat and serve.
