Preheat the oven to 400°F.

Place the puff pastry on a round oven safe dish or pie tin and place a weight over the dough. The objective of the weight is to keep the pastry from rising or deforming while it's cooking. Place the dough into the oven and bake for 15 minutes.

While the puff pastry is baking, set a handful of whole pecans aside for decoration later. Chop the rest of the pecans with your food processor so that you are left with small pieces.

Mix the beaten eggs, the sugar, room temperature butter, and the vanilla essence or extract in a bowl. Mix with a hand mixer or similar and finish by adding the chopped pecans. Mix again.

Remove the puff pastry from the oven and place the mixture on top. Sprinkle the whole nuts that you had set aside on top of the pie as decoration.

Bake at 350°F for 35-40 minutes, until a knife or toothpick come out clean when you prick the center.

This recipe calls for more sugar, but the quantity we wrote is more than enough.
In these types of recipes, it's common to find recipes that will use corn syrup.
If you're struggling to find a weight to place on top of the puff pastry, normally you can put legumes such as garbanzos or beans on top. And of course, you can still cook them later on without a problem.
