Instructions
1
If you don't have pre-cooked rice start by preparing some. For this, add a tablespoon of olive oil in a pot and when it's hot, add a sliced clove of garlic. When it begins to color, add a cup of rice. Stir it for a couple of minutes and then add 2 cups of hot water and a teaspoon of salt. Cook on high heat for about 7 minutes and then lower the heat and cook over low heat for 8 more minutes. If in this time the rice has absorbed all of the water and is still hard, add a little more water. Let it stand for a couple of minutes.
2
Finely chop the onion.
3
Wash and dice the tomato.
4
In a bowl add the rice, chopped onion, diced tomato, beans and drained corn. With a spoon lightly mix the ingredients.
5
Finish it off by sprinkling chopped cilantro on top.
