
Quinoa with Chickpeas and Avocado

canned chickpea

Wash the quinoa under cold water to prevent it from tasting bitter. Bring around 1 cup of water to a boil in a pot. Once boiling, add the quinoa and a pinch of salt. Cook until the kernels have popped open, about 20 minutes. Remove from the heat, drain, and let cool.

Mince the onion.

Wash and cut the tomatoes into a small dice. Cut the avocado into a small dice.

Combine the quinoa with the onion, tomato and chickpeas in a bowl. Mix well. Arrange the avocado on top.

Dress the salad with oil, lemon, and salt.
Tips & Tricks
Do you have cilantro in your fridge? If so, mince a handful and add into the salad. It’s absolutely delicious!
