Instructions

Bring 3 cups of water to a boil in a pan with a pinch of salt. Then add the quinoa and cook for 15 minutes, or until you see the kernels have popped open. Drain and arrange in one part of your bowl.

Now, prepare your other ingredients: Peel and chop 2 garlic cloves; wash and drain the chickpeas; peel and cut the carrot and onion into strips; rinse the lettuce; and carefully wash the mushrooms and cherry tomatoes.

Put the garlic into a skillet over medium heat. When colored, add the chickpeas and fry until they are also colored, stirring often. Season with salt and pepper. Remove from the skillet and fill the space covering one fourth of the bottom of a bowl.

Arrange the lettuce in the bowl. Arrange the carrot and the onion in the bowl.

Garnish with the mushrooms and cherry tomatoes over the other ingredients.

Drizzle generously with of oil and season a pinch of salt, or make your own dressing for this healthy meal.
