Quinoa with Chickpeas and Bell Pepper

Wash the quinoa under running water. Measure out 2 parts water to 1 part quinoa. Put the water into a pan and bring to a boil. Add the quinoa and let cook, about 20 minutes, until the kernels have popped open.

In the meantime, prepare the vegetables. Peel and cut the carrot into very small dice. Mince the onion and garlic. Finally, cut the bell pepper into small dice.

Heat a few tablespoons of olive oil in a large skillet. Then add the vegetables and lightly fry over medium heat, stirring often. After 5 minutes, add the chickpeas and cook with the vegetables for 2–3 more minutes.

Finish by adding the amount of quinoa you are planning to eat and mix with the rest of the ingredients. Your meal is now ready to enjoy!
