Instructions

Wash the quinoa under cold running water. Fill a glass with water, put into a pan, and bring to a boil. Then fill the glass halfway with quinoa and add. You always need 2 parts water to 1 part quinoa. Cook for 15–20 minutes, or until you see that the quinoa kernels have popped opened. Set aside.

In the meantime, wash the broccoli and cut into separate florets. Boil in a small pan, or steam until they become glossy, about 5 minutes.

Wash the lettuce and drain well. Peel the carrot and cut into the desired size pieces. Combine these ingredients in a bowl with the quinoa, broccoli and red kidney beans (washed and drained).

Now make the dressing. You can make a basic one using oil and salt, together with whatever you prefer. Or you can make vegan mayonnaise, which goes great with this dish. For this you need: 1 part plant-based milk, 2 parts milk, 2 parts mild oil, a pinch of salt, and a few drops of lemon juice. You can also add a little mustard, and even a clove of garlic.
