Apple and Pinto Beans Quinoa Salad

Instructions

Wash the quinoa. In a pot the water. When the water begins to boil, add the quinoa, a pinch of salt and cook for approximately 20 minutes until the seeds open. Remove from the heat, drain and let it cool.

Wash and cut the apple and tomato into small chunks.

Wash the lettuce and if they're too big, cut them into smaller pieces.

In a bowl add the lettuce, drained beans, tomato, apple and quinoa. Gently stir the ingredients until they've been mixed together well. Serve and enjoy!
Tips & Tricks
You can pair the salad with our suggested simple dressing. In a bowl add 2 tablespoons of honey, 1 teaspoon of mustard (Dijon) , 1 tablespoon of apple cider vinegar and a little olive oil. Whisk well and drizzle on the salad.
