Instructions

If you don’t have any leftover rice, start by making some from scratch. Slice up a garlic clove of garlic and fry in a pan. When it colors, add 1 cup rice. Stir well and add 2 cups water and a pinch of salt. Bring to a boil and cook the rice, about 10 minutes.

Peel and grate the carrots. Mince the onion and garlic. Heat a little olive oil in a skillet and lightly fry the ingredients, in this order, first the garlic, then the onion, and finally the grated carrots. After 1 minute, season with salt and pepper and any other seasoning you like. Add 1/3 cup water and simmer until it evaporates (this should take 10–15 minutes).

Blend the contents of the skillet with 2 cups of cooked rice in a food processor, gradually adding flour to create a smooth and consistent mixture you can shape into patties without falling apart. Adjust the seasoning with the salt and pepper if necessary.

Shape the mixture into balls with wet hands, then flatten to form patties. You can then fry them as they are, or you can dip them in a mixture of breadcrumbs and plant-based milk and fry them over high heat. Then serve and enjoy!

Tips & Tricks

Why not season the patty mixture with a little cumin? This spice aids digestion and adds a special flavor. Don’t have any cumin? Add any other spice you like.

Wash the carrots before peeling so you canuse the skins to make a delicious vegetable broth.
