Instructions

Cook the rice as instructed on the packaging.

Peel the jumbo shrimp and cook in a pan with some oil for several minutes.

When the rice is ready transfer to a bowl and let it cool. Add the shrimp and chopped tomatoes, onion, and avocado.

Dress with some salt, oil, and vinegar.

You can add the vegetables you prefer to the salad.
To save time, you can buy frozen peeled jumbo shrimp. You can defrost them or add them to the pan frozen, or in this case, cook a few more minutes until they are done.
You can substitute rice for other cereals like quinoa or millet.
