Rice Salad with Jumbo Shrimp and Avocado

Cook the rice as indicated in the instructions on the packaging.
Cook the peeled jumbo shrimp in a pan with some olive oil for 5 minutes, until it turns white.
Let the rice and shrimp cool down a bit before adding the diced tomatoes, onion, and olives.
Mash the avocado with salt and lime juice and mix with the rest of the salad. Add more salt if necessary.
