Rice with Beef and Peppers

Pour a tablespoon of olive oil into a pot and when it becomes hot, add a sliced garlic clove. When it begins to color add the cups of rice. Stir for several minutes and then add 2 cups of hot water and a teaspoon of salt. Cook on high heat for 7 minutes and then turn down the heat to low and cook for 8 more minutes. If in this time the rice has absorbed the water and is still hard, add some more water. Let it stand with the lid on for a bit.

While the rice is cooking, take advantage and prepare the rest of the ingredients. Dice the onion into small cubes on a cutting board. Slice the peppers.

Drizzle olive oil into a large pan and lightly fry the onion and peppers on medium heat for 6-7 minutes.

Grill the beef in another pan. Remove from the pan and slice the beef into strips.

Add the sliced beef and grated ginger to the pan that has the vegetables and then pour the soy sauce on top. Sauté for several more minutes.

Lastly, add the rice and the cashews.
