Asian Inspired Rice with Broccoli and Red Bell Pepper

Put 2 cups of water to boil over medium-high heat with some salt. Lower the heat when it begins to boil and add the rice. Let it cook for about 10 minutes (or until the time indicated on the packaging).

While the rice is cooking, wash the broccoli and finely chop the top half (you can reserve the stalk for a homemade soup). Put it to boil in another pot or in the same water used for the rice.

Add oil to a pan and put it over medium heat and introduce the sliced onion and bell pepper. Let it turn golden brown. When the broccoli is ready, remove it from the pot and sauté with the rest of the ingredients.

Add salt and pepper, the crushed cashews, and the soy sauce. When the rice is ready add it to the pan to cook together for 2 or 3 minutes.
Tips & Tricks
Why not try adding raw sliced leek as an accompaniment or as a substitute for the onion? It'll turn out stupendous!
Decorate your rice and broccoli dish with sesame seeds and you'll have the perfect final touch.
The rice will taste even better if, instead of adding it to boiling water, you first fry some sliced garlic and then add the uncooked rice to the pot. Let the uncooked rice absorb the garlic flavor and lightly fry before adding the water.
