If you have leftover cooked rice in your refrigerator, perfect because you will need it for this delicious recipe. If you don't have cooked rice you can look at our tips and tricks and we'll explain how to make it.

Chop the pumpkin and onion into medium size dice.

Add some olive oil to a large skillet. When the oil is hot add the onion and pumpkin and let it cook over medium heat for 10-12 minutes. Add some salt to the ingredients.

Add the raisins to the skillet and let them heat up and soften for about 1 minute.

Add the rice to the skillet. Stir and mix well and once warm, turn off the heat and serve on your plate. Enjoy!

Tips & Tricks

If you don't have cooked rice, no problem! Here we will explain how to make it. Add a tablespoon of olive oil in a pot, and once it is hot, add the sliced clove of garlic. When it begins to lightly brown, add the rice. Stir it for a couple of minutes before adding the hot water with a pinch of salt. Cook over high heat for 7 minutes and then turn down the heat to low and cook for 8 more minutes. If in this time, it absorbs all of the water and is still hard, add more water. Let it sit for a little bit.|If you don't have red onion you can use white onion instead.
