Rice with Tofu Scramble and Vegetables

Start by preparing the rice if you don't have any already made. For this, add a tablespoon of olive oil in a pot, and once it is hot, add the sliced clove of garlic. When it begins to lightly brown, add the rice. Stir it for a couple of minutes before adding the hot water with a pinch of salt. Cook over high heat for 7 minutes and then turn down the heat to low and cook for 8 more minutes. If in this time, it absorbed all of the water and is still hard, add more water. Let it sit for a little bit.

Place the tofu into your food processor (or use a knife if you don't have one) and grind so that it is shredded.

Dice all of the vegetables into medium size cubes: the red bell pepper, green bell pepper, the carrot, and the onion.

Add some olive oil into a large pan and when it's hot, add the vegetables you have just diced. Cook for 6-7 minutes until they are well cooked.

Add the shredded tofu into the pan and add a pinch of salt. Cook for several minutes until the tofu is cooked.

Add the rice to a plate and add the tofu scramble with vegetables on top.
Tips & Tricks
You can use soy sauce instead of salt to make the dish more interesting.
You can add a handful of nuts like cashews, peanuts, or walnuts.
