Savory Spinach Pancakes

Instructions

Wash the spinach and put into a food processor or blender with the water. Blend well.

Add the egg, flour, salt, and oil to the spinach mixture and blend until smooth.

Place a skillet over medium heat.

When hot, add a little of the batter and spread over the surface. Wait until it cooks a little (when you see small bubbles starting to appear on the surface) and flip the pancake. Cook on the other side. Make as many as you can until all the batter is used up.
Tips & Tricks
You can fill or top the pancakes with your favorite ingredients, such as cheese, chicken, and tofu.
You can also make them any size you like. We made them large so they would be easier to fill. We used a medium skillet in this case.
The batter goes a long way. You can make lots of pancakes so you won’t be left feeling hungry.
