Instructions

Combine all the ingredients in a blender or food processor, except the olive oil. Blend thoroughly to a thick but manageable batter. If it turns out too thick, dilute with a little more milk.

Heat the olive oil in a skillet. Then add a little batter and tilt the skillet to spread over all the surface.

When the batter is cooked on one side (you’ll see that small bubbles have formed on the surface), use a spatula to flip the pancake and finish cooking. Make as many as you can until all the batter is used up.

Serve stacked on a plate and top with fruit, seeds, etc. Whatever you like.
