Instructions

In a medium-sized skillet, sauté the onion, garlic, and olive oil over medium heat until the onions soften and turn golden brown. Then, remove them from the pan and set aside.

Using the same skillet, combine the butter, cubed bread, and beef broth, heat the mixture over medium high heat until the bread softens and turns brown. Then, remove and set aside with the onion mixture.

Whisk the eggs and 1/2 cup of water together, then scramble over low heat, adding the spinach near the end of the cooking time.

For each serving, layer the eggs and spinach, onions, and bread cubes, then sprinkle with the swiss cheese.

Tips & Tricks

If desired, you can place the dishes under the broiler to brown the bread crumbs and cheese (just make sure your dish is oven proof).
