Spicy Mushroom and Potato Skillet

Wash the potatoes and dice into small cubes.

Add water to a pot along with a teaspoon of salt. Once the water begins to boil add the potato and cook for 10-12 minutes. The potatoes will be ready this time if they were cut into medium or small pieces. If not, they will take more time to cook.

Slice the onion and mushrooms.

Add a drizzle of oil to a pan. Once it's hot add the onion and mushrooms and cook on medium heat for 6-8 minutes.

Add the cooked potatoes to the pan along with the curry and cook for a few minutes.

Mix the tomato sauce and sriracha in a bowl and add to the pan with a bit of salt. Leave it on medium-low heat for 2 minutes.

Make two holes in the pan and add the eggs into these holes with a pinch of salt. Cover with a lid and let it cook. This will take a few minutes. Serve immediately.
