Instructions

Preheat the oven to 350°F.

Cook the rice as instructed on the packaging (we also have cooking instructions in our tips and tricks).

Wash and slice the tomatoes. Place the tomatoes on a baking sheet with some salt, oregano, and olive oil. Place the sea bass filets and broccoli on top and bake for 20 minutes.

Mix the cooked rice in a pan with the drained garbanzos, the curry, coconut milk, and some salt. Let it cook for several minutes.

Place the curried rice and garbanzos on a plate and follow it with the sea bass and veggies from the oven.

Tips & Tricks

You can substitute the broccoli for broccolini.

To cook the rice, add a tablespoon of olive oil in a pot, and once it is hot, add the sliced clove of garlic. When it begins to lightly brown, add the rice. Stir it for a couple of minutes before adding the hot water with a pinch of salt. Cook over high heat for 7 minutes and then turn down the heat to low and cook for 8 more minutes. If in this time, it absorbed all of the water and is still hard, add more water. Let it sit for a little bit.
