Instructions

Start by preparing the rice. For this, add a tablespoon of olive oil in a pot, and once it is hot, add the sliced clove of garlic. When it begins to lightly brown, add the rice. Stir it for a couple of minutes before adding hot water with a pinch of salt. Cook over high heat for 7 minutes and then turn down the heat to low and cook for 8 more minutes. If in this time, it absorbed all of the water and is still hard, add more water. Let it sit for a little bit.

Finely chop a garlic clove and add into a bowl. Add the bread crumbs, some salt, a tablespoon of lemon juice, finely chopped parsley, and a tablespoon of olive oil as well. Mix all of the ingredients and set aside.

Add some salt and pepper to the cod and place in an oven-safe dish. Add the bread crumb mixture on top of the cod, like a crust.

Place the cut broccoli florets into the dish and drizzle some oil on top and sprinkle some salt. Place the dish into the oven and bake at 400ºF for approximately 15 minutes.

Serve on two plates and decorate with several slices of lemon. Enjoy!

Tips & Tricks

You can use panko, instead of bread crumbs and it'll make the dish more original.

You can add a lot of spices to the bread crumbs to intensify the flavor. For example, paprika, garlic salt, etc.
