Lightly fry the onion in a pan until it is golden. Add the spinach and let it cook for several minutes. You will see that the volume will notably reduce. Let it cool.

Toast the bread on the same pan you just used. If it still has some oil then it is not necessary to add more oil or butter for the bread. Once you see it starts to become golden you can remove it.

Add the spinach you had set aside to the cheese and mix. Add this filling to the bread.

Take the sandwich and place back into the pan and place a lid so that the cheese melts with the heat. Enjoy immediately.
