Instructions

Drain the tofu and remove all excess water by cutting it in half and pressing it with a paper towel.

Chop the tofu into medium size pieces and cook in a pan with some olive oil for about 10 minutes, until it becomes golden brown on each side.

Mix the peanut butter, soy sauce, and vinegar well in a small bowl. Add the tofu and cover each piece with the peanut sauce.

Peel and grate the carrot.

Prepare the salad by adding lettuce, the carrot and tomato into a salad bowl. Add the tofu with the peanut sauce and dress the salad as desired.

Add all of the vegetables you'd like to the salad such as tomato, onion, bell peppers, or grated carrots.

You can make this salad complete by adding some sesame seeds and some pumpkin seeds on top.

When picking out your soy sauce, pick one that doesn't contain any sugar for a healthier option.

For a gluten-free option you can use tamari sauce instead of soy sauce.
