Turkey Pesto Sandwich with Sun-Dried Tomatoes

Spread pesto on each slice of bread. Don't be shy and make sure to cover each slice with the pesto.

Now it's time to prepare the sandwich. On each slice of bread place a slice of turkey, a slice of cheese, and half of the amount of sun-dried tomatoes. Stack another slice of turkey on top of the tomatoes and close the sandwich with the other slice of bread with pesto.

Once assembled, pour some oil into a pan over medium heat. Put the sandwich in the pan and toast each side of the sandwich so the cheese melts. There's no rush, the more toasted the sandwich gets, the better it tastes.
Tips & Tricks
To make this sandwich even more scrumptious it is important that the sandwich toasts in the pan for several minutes. Doing this will melt the cheese inside, and gives the bread a slight crunch.
We toasted our sandwich with olive oil, but you can use butter or margarine if you prefer either.
