Instructions

Open the can of sardines. Remove them and place on a cutting board. Use a knife to carefully cut them in half. Remove the central bone.

Add the sardines, a piece of onion, the shredded carrot, mayonnaise, and mustard to either your blender or food processor. Blend until you have a sardine pâté.

Toast the bread. On one slice spread some of the pâté. Place several pieces of sun-dried tomato on top, along with a handful of arugula. Finish by spreading more pâté on the other slice. Close the sandwich and presto!

Repeat the steps to put the other sandwich together.

Tips & Tricks

If you would like the pâté to be juicier you can add more mayonnaise to the mixture.

If you don't have a blender or a chopper or you don't feel like using it, you can just chop the sardines and onion finely and mix it with the shredded carrot, mayonnaise, and mustard.
