Carrot and Spinach Rice

Finely chop the garlic and onion and lightly fry them in a pan with oil.

After 3 minutes, add the spinach (previously wash and diced), the sliced or chopped carrot, and tomato sauce. Stir and let it cook over medium heat for 4-5 minutes.

Add the uncooked rice to the pan. Stir for several minutes and add the vegetable stock and a teaspoon of salt. Cook over high heat for 7 minutes before lowering the heat. Cook over low heat for 8 more minutes. If in this time it has absorbed the liquid and is still hard, add some more water. Let it stand a bit before serving.
Tips & Tricks
If you don't have vegetable broth you can use water instead.
