Instructions

In a bowl, mix together the flour, yeast, grated (or ground) ginger, cinnamon, and a pinch of salt.

Crush the walnuts on a cutting board using a rolling pin, meat tenderizer, or something heavy. Add the walnuts to the mixture.

Grate the carrots.

Preheat the oven to 400°F.

In another bowl, mix the eggs with the sugar and oil. Beat well. Add the grated carrots and yogurt. Mix well. Finally, add the crushed walnuts and stir in.

Add the dry ingredients from the first bowl to the second bowl containing the wet ingredients. Mix everything well.

Grease a cake pan or suitable ovenproof dish and pour in the batter. Bake at 400°F, about 25 minutes. The cake will be ready when you prick the center with a knife and the blade comes out clean.

Tips & Tricks

Do you have any cardamom? If so, add half a teaspoon to the dry ingredients and continue with the recipe as above. It gives the sponge cake a special zing.
