Instructions

Heat a little olive oil into a skillet and lightly fry the chicken, seasoning with a pinch of salt. Transfer to a cutting board and cut into small pieces.

Wash the lettuce and put into salad bowl. You can use baby lettuce, assorted salad greens, arugula... whatever you have on hand, or prefer.

Wash and cut 1/2 apple into thin pieces and scatter over the lettuce. If the apple is small, use a whole one.

Add the chicken and walnuts. Now your salad is ready for the table.

Yogurt Dressing In a bowl, combine unsweetened plain yogurt with 1 minced garlic clove, 2 tablespoons lemon juice, 1 tablespoon olive oil, 1/2 teaspoon salt, and 1 pinch pepper. Mix well. If you like cilantro, stir in a handful of minced leaves. 2. Honey and Mustard Dressing In a bowl, combine 5–6 tablespoons olive oil with 1 pinch salt, 1 tablespoon Dijon mustard, 1 tablespoon honey, and the juice of 1/2 lemon. Whisk briskly until thick and smooth. Use a hand mixer if this is easier for you.
If you have some cheese in the fridge, you can dice a little and sprinkle over the salad.
