Instructions

Add a tablespoon of olive oil into a pot and when it's hot, add the sliced garlic. When it begins to brown, add the rice. Give it a few stirs, and then add the hot water and a bit of salt. Cook over high heat for 7 minutes, and then turn down the heat to low and cook for 8 more minutes. If in this time the rice has absorbed all of the water but is still hard, add some more water. Let it stand for several minutes.

Prepare the vegetables: wash and cut the asparagus. Wash and slice the mushrooms, and then wash and finely slice the carrot (you can use a peeler).

Drizzle some oil into a pan. When it's hot add the asparagus and cook for 4-5 minutes over medium heat. Next, add the sliced mushrooms, and the grated carrot. Cook the vegetables for 8-10 minutes, and then at the last minute, add a tablespoon of soy sauce. Remove the vegetables from the pan and set aside.

Slice the chicken breast and cook in the same pan used to cook the vegetables. Add a drizzle of soy sauce and let the chicken absorb the flavor.

Place a bed of spinach on a plate, followed by the rice, vegetables, the chicken, and finally, the cashews. Finish by lightly drizzling the whole dish with some olive oil.

Tips & Tricks

You can use normal rice but if you use basmati, you will end up with an aromatic rice that smells like Thai food.

If you would love for your chicken to taste even more amazing, we recommend you season with garlic powder and ground ginger. Place the chicken breast in a small tupperware and add 1/2 teaspoon of garlic powder, and several pinches of ground ginger and 2 tablespoons of soy sauce. Close the tupperware and give it a shake or two and let it marinate while you prepare the rest of the ingredients (you can also do this several hours before to let the chicken absorb more flavor).

Use low sodium soy sauce to reduce the amount of sodium in the dish.

This is also excellent to take to work in a tupperware but be careful not to pack the spinach with the rest of the food, so it doesn't wilt.
