Cut the chicken breast into cubes and season with a pinch of salt and pepper.

Beat an egg in a bowl, and put the flour on a plate. Dip the seasoned pieces of chicken in beaten egg and then dredge in the flour.

Heat the oil in a skillet and fry the chicken pieces. Set aside on paper towels to drain as much oil as possible.

Combine scant 1/2 cup ketchup (not canned tomato sauce) with the soy sauce, sugar, and vinegar in a bowl. Stir well.

Pour this sauce base into a skillet and add 3 tablespoons water. Cook for 3 minutes, stirring constantly until it comes to a boil. Season with a pinch of pepper. After 3 minutes, you'll see that the sauce will have thickened.

Add the fried chicken to the sauce. Mix thoroughly. Your sweet and sour chicken is now ready.
Tips & Tricks
This recipe uses ketchup, not store-bought tomato sauce.
