Instructions

Melt the dark chocolate in a bain-marie (double boiler) or in the microwave.

Beat the eggs with the sugar in your blender until the mixture is spongey. Add the melted chocolate, olive oil, and blend again.

Add the oat flour, baking soda, and cocoa. Blend the ingredients again until you reach a homogenous mixture.

Pour the mixture into a bowl and place in the fridge for 30 minutes, so that it is easier to manipulate the batter later.

Grease the parchment paper and start making balls out of the batter with a spoon and placing it on the paper. Press the cookies a bit and bake at 350˚F for 13 minutes. Delicious!
